Sardinia Haute Cuisine
Our chef, Fulvia, was born in Villa San Pietro, a small country village near Cagliari. While growing up, she acquired cooking skills, passion, and knowledge from her family at her grandparents' farm. Her grandmother passed on family recipes and traditions from generations. She completed her chef training at an “agriturismo," where she mastered the recipes passed on from her family. Fulvia uses only organic products, creating a "personal" cuisine which is both classic and creative. Fulvia, and her husband, own an organic “agriturismo” in the South of Sardinia, renowned for its delicious cuisine, called "the Refuge." Your cooking lesson will follow traditional cooking methods. Your cooking experience teaches you the quality, the smell and the taste of Sardinian food by carefully choosing local food. Since its establishment in 1982, the Refuge has farmed in compliance with organic agriculture standards. At the refuge, organic vegetable growing and poultry-yard breeding are practiced. The refuge has a centre of Environmental Education, run by the ecology society "Legambiente". Other production at the farm includes dairy, various type of cheese, garden vegetables, bread, cakes, Wines with their authenticated trademarks, honey, mushrooms, marmalades and distillates of wild fruits.
The idea of this package is to render an interesting sea holiday which is different from the usual holidays promoted in Sardinia. Moreover, Sardinian cuisine is one of the most flavourful in Italy. You will enjoy this unique gastronomical experience and will bring home new recipes to share with your friends.
Itinerary
Day 1
Arrival Cagliari airport and transfer to Santa Margherita di Pula - Hotel Baia di Nora or Costa dei Fiori – both 4**** - day at leisure in the resort. Both resorts feature private beach, pool, restaurants, cocktail bars and piano bar.
Day 2
Early morning transfer to The Refuge by luxury minibus accompanied by our local representative. Meet our chef for your first cooking lesson. Our guests will learn how to make bread, fresh pasta & sauces. Before lunch - Olive oil tasting with home made bread and Carasau bread or musical paper (typical Sardinian bread) following an old shepherd’s recipe.
Lunch and return to resort and evening at leisure.
Day 3
Morning at leisure and lunch at the resort.
Early afternoon transfer to the Refuge. Wine tasting with local products and explanation about wine processing (this company produces its own labelled wine). Brief introduction to the meals prepared using wine and second cooking lesson – main courses.
Dinner and return to the resort.
Day 4
Spend day at leisure- upon request excursion to the Nora Archaeological site available
Day 5
Early morning transfer to The Refuge for last cooking lesson. Today you will learn how to prepare elaborated starters, many of which vegetarian, and typical Sardinian cakes – one of which is the famous “Sebadas”.
After lunch, you will be able to purchase organic products such as: cheese, marmalades, food in oil, pasta, wine and saffron.
Return to hotel in the late afternoon.
Day 6
Spend day at own leisure to relax and enjoy the resort.
Day 7
Spend day at own leisure to relax and enjoy the resort.
Day 8
After Breakfast morning private transfer to Cagliari airport.
